Abstract :
Endophytes may benefit hosts through diverse mechanisms, such as molecules that increase their capacity to compete for space, nutrients and/or ecological niches, the synthesis of antimicrobial substances or the synthesis of inducers of plant growth, or compounds like phytohormones and peptides that might keep vegetables or plant organs healthy, which additionally might have no negative environmental effects on consumers. Vacuum-packaged fresh lotus seeds are easily to get bulged due to the growth of spoilage microbial in the process of transportation and circulation. The flora analysis is conducted on the vacuum-packaged lotus seeds that get spoiled and bulged in this paper. The traditional method is used for the separation and identification of spoilage bacterial strains. Meanwhile, the reverse inference test is also used to find out the dominant microorganisms that cause the spoilage. Results showed that Leuconostoc, galactococcus, Citrobacter, Klebsiella peneumoniae and Enterobacter are the key bacterial strains which cause the spoilage and bag-bulging of vacuum-packaged lotus seeds. In addition, seven strains bacteria including three strains of lactic acid bacteria, two strains of bacteria and two strains of fungus were firstly separated from the spoilage lotus seeds by using the traditional method. Next, the reverse inference test is used to verify that these three isolated lactic acid bacteria strains cause the spoilage of lotus seeds. Moreover, three bacterial strains including Sidou Weissella confusa, Weissella confusa and lactococcus lactis were identified by the 16S rDNA technology.

Abstract :
测定了姬松茸不同部位的多酚氧化酶(PPO)活性,研究了不同pH、温度、底物浓度和抑制剂对PPO活性的影响,并建立酶促褐变反应动力学方程.结果表明:在邻苯二酚为底物的条件下,姬松茸PPO的最适pH为6.4,最适温度为30℃,米氏常数(Km)为6.23×10-3mol.L-1,最大反应速度(Vmax)为1.42 mol.L-1.min-1;柠檬酸对PPO的抑制效果不明显,NaHSO和异V-Na对PPO均有较强的抑制作用,且有效抑制的含量分别为0.18%和0.21%.

Abstract :
为了配合生产的需要,制定玫瑰花饮料的产品标准,对玫瑰花多糖提取率优化工艺进行研究。结果表明:在综合考虑玫瑰花多糖提取率的情况下,提取温度为90℃、提取时间为1h、不调节溶液pH时,玫瑰花多糖提取率最高,达1.49%。
