Abstract :
为探究西番莲果实的低温冷藏效果,本研究以“福建1号”生鲜西番莲果实为试材,研究了低温(6℃、8℃、10℃)冷藏期间西番莲果实呼吸强度、失重率、可食率、TSS、TA、抗坏血酸、游离脯氨酸及好果率的变化。结果表明,低温冷藏显著降低了果实的呼吸强度和失重率,有效解决了采后失水皱缩的问题,且适当降低冷藏温度可以减少果实的TSS、TA和抗坏血酸的损失;6℃冷藏组果实在28 d出现水渍状冷害斑,8℃和10℃冷藏组果实没有发生冷害,基本可以确定“福建1号”西番莲果实的冷害临界温度为6℃;果实在6℃和8℃下贮藏28 d时好果率可达到90%以上。

抗生素的耐药性如今已成为人类健康的巨大威胁,是全球关注的焦点问题。针对抗生素在水产养殖环境及水产中泛滥的现状,该文归纳了抗生素在水产养殖业中的应用现状、抗生素耐药性及其公共健康危害,分析了水产供应链中耐药细菌和耐药基因研究现状及耐药性传播风险,以期对水产业中抗生素耐药性危害的评估和削减提供新视角。

海鲈鱼采用浓度为10%和25%的食盐水溶液处理(24 h),放置于-1℃内冷藏,通过感官评价、菌落总数(TVC)、挥发性盐基氮(TVB-N)和pH值等指标来综合评价海鲈鱼贮藏品质。研究发现,不同浓度食盐水溶液处理具有减菌作用,冷藏过程中可以明显抑制细菌的生长,同时延缓微生物产生TVB-N的能力。通过Pearson相关分析,海鲈鱼冷藏过程中感官评分与TVC、TVB-N具有极显著相关性,而与pH值无显著相关性。海鲈鱼冷藏保鲜期需要结合3个指标进行综合评价;综合评估得出10%与25%食盐水溶液处理可以延长海鲈鱼达到优级品品质的冷藏期分别为4 d、8 d;达到合格品品质的冷藏期分别为8 d、12 d。

Abstract :
The blue mussels (Mytilus edulis) were used to investigate the physiological and biochemical indexes during the continuous cooling process (from 18 degrees C to 1 degrees C). When temperature of the samples reached the corresponding temperature (18 degrees C, 12 degrees C, 7 degrees C, 5 degrees C, 3 degrees C and 1 degrees C), the body fluid were subjected to the assessments. Results showed that the respiratory and excretion level of the samples decreased as the temperature decreased. There were no obvious changes of content of glutamic-oxaloacetic transaminase, glutamate-pyruvic transaminase and creatinine between the original and the final temperature point (p > 0.05). And the concentration of glucose, triglyceride, and cholesterol of the samples first went up and then reduced as the decrease of temperature. While the uric acid concentration increased overall. Results would be helpful to illustrate the dormant mechanism of the blue mussels induced by continuous cooling.

BACKGROUNDFresh Agaricus bisporus is popular and consumed throughout the world because of its taste, as well as its nutritional and medicinal properties, but it is also prone to microbial growth. There is very limited information about the dynamic changes of microbial communities during storage. The present study aimed to analyze the microbial diversity of button mushroom during cold storage using Illumina HiSeq sequencing. Bacteria isolated from the later storage period were identified by MALDI-TOF mass spectrometry and a bioassay of pathogenicity was carried out. RESULTSHigh-throughput sequencing showed that Pseudomonas was the predominant genus throughout the storage period. Pedobacter and Flavobacterium grew prolifically on the eighth day, while the relative abundance of Oscillospira continued to decrease. Pseudomonas, Ewingella and Chryseobacterium were isolated at the later period of mushroom storage. A pathogenicity bioassay on the cap of mushrooms showing brown blotch indicated an infection by Pseudomonas tolaasii. However, Ewingella americana did not have a pathogenic effect in our study. CONCLUSIONBacterial communities of fresh Agaricus bisporus during cold storage were characterized by high-throughput sequencing. MALDI-TOF MS provides a good analytical procedure, in addition to 16S rRNA gene sequencing. (c) 2019 Society of Chemical Industry

本实验探讨了冰温贮藏对黄花梨蔗糖代谢的影响。实验结果表明,贮藏期间黄花梨蔗糖代谢向分解方向进行。黄花梨的总糖、果糖、葡萄糖含量在贮藏期间的变化趋势为先上升后下降,冰温贮藏可以显著(p<0.05)抑制贮藏60d后黄花梨葡萄糖含量的下降。而山梨醇、蔗糖含量在贮藏过程中持续下降,并且冰温贮藏对其下降速度有显著(<0.05)抑制效果。-1℃贮藏的黄花梨蔗糖磷酸合成酶活性显著(p<0.05)大于5℃贮藏组。贮藏90d后,-1℃贮藏的黄花梨中蔗糖代谢相关酶活性均开始下降至一个较低的水平,其中贮藏90d后AI活性下降显著(p<0.05),使冰温贮藏的黄花梨蔗糖代谢逐渐减弱,从而维持果实中糖类物质的稳定。

本文通过对4℃、6℃、8℃、10℃条件下贮藏的番石榴硬度、呼吸强度、可溶性固形物含量、可滴定酸含量、可溶性糖含量、失重率、好果率随时间变化的对比。对番石榴的最适贮藏温度进行筛选。实验结果表明低温可以抑制番石榴采后的生理代谢,从而良好的维持其贮藏品质。而过低的温度会导致番石榴发生冷害现象,从而影响其贮藏品质。6℃贮藏的番石榴贮藏品质要好于其他组,且不发生冷害现象。故6℃是番石榴的最适贮藏温度。
