Consumers? preferences for health-related and low-carbon attributes of rice: A choice experiment SCIE SSCI

Abstract :

Sustainable food consumption behaviors are related to not only environment-friendly but also consumers' self-health concern. Several studies have shown that emphasizing the health attribute of food could increase eco-friendly food consumption. The effect of health attributes in combination with low carbon foods needs to be emphasized when measuring consumer preference for sustainable foods. Brown rice is chosen in this study as a sustainable alternative. Five attributes including low-carbon, health, percentage, price, and cooking method were adopted in the choice experiment to test the main effect on consumers' preference in China. A total of 1215 respondents accomplished the questionnaire through an online survey. Results showed substitution percentage had the largest influence among the five attributes. In addition, consumers demonstrated positive attitudes towards health and low-carbon information displayed by both labels and brief claims on the front-of-package. However, soaking brown rice and substituting brown rice for white rice would decrease consumers' utility. The results indicated that the promotion of low carbon food consumption behaviors should consider the convenience and gradual change. We also measured the effect of the combination of health and low carbon attributes, and a substitution effect was observed when information about these two attributes displayed simultaneously. It means these two attributes displayed together would discount rather than improve the premium of consumers. Meanwhile, the interaction between main attributes with sociodemographics indicated that consumers with higher-education level and richer knowledge of low carbon exhibited a more positive attitude toward the low-carbon attribute and a more negative attitude towards health information. Forestry professional cooperatives (FPCs) are crucial for improving the efficiency of small-scale forestry, realizing forestry modernization, and promoting the sustainable development of forestry in China. However, credit constraints restrict their development. Previous studies have examined the credit rationing issues faced by farmers and enterprises. Few researchers have investigated the financial constraints of FPCs. This paper discusses the current status of credit rationing of FPCs in China, and analyzes the influencing factors of credit rationing. Based on survey data collected in China's Fujian Province, we found that the credit demand of most FPCs was not met, which was primarily due to the limited amount of loanable funds available. Our empirical results reveal that greater woodland area, product popularity, president's credit record, Forest Rights Guarantee and Storage Agency (FRGSA) are statistically significant factors in reducing the credit rationing of FPCs. We find that, conversely, development planning has the opposite effect. Based on our results, we propose some suggestions, such as ensuring the products have good sales channels, keeping a good credit record of the presidents and adopting forest right storage guarantees, which will help alleviate the credit constraints of FPCs.

Abstract :

Repeated food scandals in China have prompted growing consumer consciousness on food safety and health. Organic food, considered to be of higher quality, is being increasingly demanded by Chinese consumers. This study examines preferences for organic labels to provide insight on the sustainable development of the Oolong tea industry. Research was conducted using the choice experiment (CE) method in Fujian and Guangdong Provinces. The results demonstrate that place of origin, organic label, and brand attributes are all significant factors affecting the purchase of Oolong. Also, people demonstrated significantly positive attitudes toward organic labels and preferred Oolong tea from Fujian Province to those from Guangdong Province and Taiwan. Increasing trust can enhance consumer preference and willingness to pay (WTP) for organic labels. Contrary to previous studies, people have a higher WTP for Chinese organic labels than Japanese and American ones. This is probably because respondents are more familiar with domestic Oolong tea and trust more in Chinese organic certification. This provides an opportunity for domestic producers to tailor their organic food labels and better satisfy consumer demands. These findings suggest that the Chinese government should take more responsibility for reducing food-related fraud and thus improve consumer trust regarding organic food.

Abstract :

The food production is a significant contributor to global greenhouse gas (GHG) emissions, and it has attracted many researchers' attention. In the present study, carbon footprints (CFs) of wheat-based foods and potato during cultivation, transportation, storage, and processing phases were investigated according to the LCA (life cycle assessment) principle. The results showed that wheat-based products were associated with much higher carbon emissions than potato per kilogram of edible portion. Cultivation phase is the most important stage, and carbon emissions per kg food increased with more machining process. For different carbon emission sources, fertilization, electricity use, and N2O emissions are the top three contributors. On the other hand, CFs of foods were evaluated based on carbohydrate based-, protein based-, fat based-, dietary fiber based-, and nutrient density based functional units. CF values of product per functional unit varied depending on the functional unit used. When the macro-nutrients were considered, the low-carbon emissions competitiveness of potato over wheat flour was reduced significantly. In this research, nutrient density used as the basis of functional unit could be more appropriate than individual nutrient alone to illustrate the environmental impacts of different foods. In summary, consumption of more standard grade flour and potato instead of tailared flour (grade one) could cut a considerable amount of GHG emissions in China. © Published under licence by IOP Publishing Ltd.

以福建省三明市"福林贷"产品为例,建立合作社、农户、金融机构三方共同参与的两阶段博弈模型,通过博弈分析方法挖掘出合作社担保模式对林权抵押贷款的作用机理。结果表明:林业经营环境、贷款利率、合作社帮扶力度对林权抵押贷款需求具有积极影响,农户违约惩罚对保障贷款偿还率具有积极影响但对林权抵押贷款需求具有消极影响;合作社承担过多的还贷帮扶责任不利于社会总体效用。最后,基于研究结果对合作社担保模式下的林权抵押贷款发展提出相应的对策方案,为持续深化中国农村集体林权制度改革提供决策依据。

Rice and potato are Chinese traditional foods. In this research, carbon footprints (CFs) of rice-based (RBSF) and potato-based (PBSF) staple foods were investigated. A great number of studies related to food CFs are often concerned about agricultural cultivation. However, the predominant source stage was cooking for the boiled potato and processing for the mashed potato in this research, accounting for 58.8% and 71.6% of their total CF, respectively. To support effective policies that reduce carbon emissions, assessments of the product CFs at a wider system boundary are more reliable. In addition, the types showed significant impacts on the food CFs, as the CF value of late indica rice was about 1.7 times more than that of early indica rice with a similar processing level. Therefore, adjustment of rice planting proportion and area could reduce agricultural carbon emissions. Sensitivity analysis showed that appropriately increasing the cooking amount in a batch enhances environmental benefits. When the cooking amount was reduced from four portions to one portion, the CF value was increased by 30%-45% for the RBSB and 89.5% for the boiled potato. On the other hand, different functional units were employed to evaluate the food CFs. CF values per functional unit for a same type of food varied greatly depending on the functional unit applied. Nutrient density (ND) based functional unit is more suitable to exactly reveal the environmental impacts of foods. When the ND based functional unit was used, CF values of polished rice and mashed potato indicated strong unsustainability. The results in this study showed that boiled potato consumed as the staple food is beneficial from both environmental and nutritional viewpoints. However, PBSF prepared by potato powder was not an eco-friendly food choice. The strategy of developing potato as staple food deserves serious consideration by Chinese government. This paper studies an integrated scheduling problem which consists of both production and transportation stages. Jobs are processed on a set of parallel batch-processing machines in the production stage, and then transported to a target customer in the transportation stage. The aim is to find an optimal integrated production and transportation schedule with the objective to minimize the weighted sum of total delivery time and total transportation cost with a relative preference alpha. A 0-1 mixed integer programming model is then constructed. To solve the proposed model, which is NP-hard, a developed GA is proposed to produce near-optimal solutions for large-size instances. Computational experiments on 720 instances with up to 150 jobs and 5 parallel batch-processing machines show the effectiveness and efficiency of the developed GA.

Assessing the Carbon Emission Driven by the Consumption of Carbohydrate-Rich Foods: The Case of China SCIE SSCI

Background: Carbohydrate-rich (CR) foods are essential parts of the Chinese diet. However, CR foods are often given less attention than animal-based foods. The objectives of this study were to analyze the carbon emissions caused by CR foods and to generate sustainable diets with low climate impact and adequate nutrients. Methods: Twelve common CR food consumption records from 4857 individuals were analyzed using K-means clustering algorithms. Furthermore, linear programming was used to generate optimized diets. Results: Total carbon emissions by CR foods was 683.38g CO(2)eq per day per capita, accounting for an annual total of 341.9Mt CO(2)eq. All individuals were ultimately divided into eight clusters, and none of the popular clusters were low carbon or nutrient sufficient. Optimized diets could reduce about 40% of carbon emissions compared to the average current diet. However, significant structural differences exist between the current diet and optimized diets. Conclusions: To reduce carbon emissions from the food chain, CR foods should be a research focus. Current Chinese diets need a big change to achieve positive environmental and health goals. The reduction of rice and wheat-based foods and an increase of bean foods were the focus of structural dietary change in CR food consumption.
